Carrot Orange & Ginger Soup

Carrot, orange and ginger are not only the ingredients for a great juice but also make for a refreshing soup. This soup is filled with nature’s original superfood, carrot, and the benefits of a healthy digestive system and boosted immunity. This rooted veggie is a great source of antioxidants and is rich in Vitamin A, B8, C and K, and folate, iron and copper.

Servings 6

1½ lbs. raw carrots, chopped
6 cups vegetable stock
1 whole orange (about 1 cup)
½ cup sweet onion, chopped
2 cloves of garlic, chopped
1½ inch fresh ginger root
2 tablespoons coconut oil
1 tablespoon orange zest
1 teaspoon sea salt (to taste)

1. In a large pot, on medium heat add coconut oil, garlic, onions and sea salt. Cook for about 5-8 minutes.
2. Add the vegetable stock.
3. Add carrots and Cook until the carrots are fork tender, about 15 minutes.
4. Carefully pour the hot liquids with vegetables in a high speed blender with all remaining ingredients and blend until smooth.
5. Add the orange and fresh ginger and blend again until smooth. You can adjust the liquid, if you like a thinner soup just add more water.
6. Garnish with your favorite seeds and fresh herbs.
7. Enjoy!
