Many of you love the idea of eating healthy and have responded positively to my posts and shared recipes on Instagram so I wanted this week’s recipe to be a quick and easy to make snack for my ladies on the go. Thank you for the feedback by the way! Keep following — it’s much appreciated.
My solution to a crunch time “no time to eat healthy” schedule is Coconut Apricot Energy Balls. They’re nutritious. They’re protein. They’re a fat burner and they can be made in less than 15 min and will keep you satisfied for hours. You’ll love these no-bake, portable, totally easy to make energy bites; and you’ll love yourself more — for not reaching for that bag of chips to curb your hunger. Energy bites can be stored in airtight containers for up to a week and are filled with a multitude of health benefits. Dates promote weight loss and a healthy heart, and can reduce blood pressure. Apricots and Cashews are a great source of natural fiber and keep your digestion process in check! And since this is a no sugar added recipe we can sweeten it up with coconut which is also a great source of natural vitamins and minerals.
Prep time 15 mins
Servings 4 balls
3 dates (pitted)
4 dried apricots
⅓ cup (50gr) cashews
1 cup (80gr) shredded coconut
½ teaspoon vanilla extract
1 tbsp honey or maple syrup
1 pinch of salt
1. Place all ingredients in a food processor.
2. Process until the ingredients are broken down and look like a coarse crumb. If you pinch it between your fingers, it should stick together.
3. Roll the mixture into 1-inch balls.
